Fiesta-style breakfast burritos make a great, hearty breakfast option! Protein-packed tofu with whole grain tortillas, topped with fresh or cooked veggies and salsa; breakfast just got a little spicier— and more nutritious!

Breakfast-scramble

 

Ingredients

14-16 oz package of firm or extra firm tofu

1 ½ teaspoon chili powder

½ teaspoon cumin powder

½ teaspoon garlic powder

½ teaspoon onion powder

1 ½ teaspoon paprika

½ teaspoon black pepper

½ teaspoon ground turmeric

1-2 tomatoes

1 onion

1-2 avocados

Fresh cilantro

Salsa

limes (optional)

Whole wheat or corn tortillas

Instructions
  1. Drain any liquid from the tofu. Place the tofu on a clean towel and press out the liquid in the tofu.
  2. Add the tofu to a pan and crumble with a spatula. Sauté on medium-high heat without oil. Once the tofu starts to lightly brown, add the spices. Continue to stir well. Add a small amount of water, if necessarily.
  3. Wash and chop the vegetables.
  4. Lightly heat the tortilla shells on a pan. Top with all the fixings and enjoy!
